Cooking is optional in this spread, but we did decide to take on one easy dish each – Roasted Delicata Squash with Pomegranate Seeds, and Butternut & Apple Bisque (recipes coming up)…

Our ultimate Friendsgiving menu!
1. Cheese, glorious cheese
And don’t forget gourmet crackers from around the globe, breadsticks, jams, chutneys, and balsamic vinegar pearls.
Make it extra special with an array of fabulous cheese selected by Lisa & Luis, the New Morning Market cheesemongers!
They shared a good rule of thumb with us – make sure there’s a hard & soft/cow & sheep cheese in your spread. Try a couple from our list…

- Wensleydale with cranberries
- Brillat-Savarin Affiné (triple cream heaven!)
- Le Pico (soft-ripened goat cheese)
2. Small batch salamis & spinach quiche
Gourmet meats and New Morning Market made quiche, yum!
3. Roasted delicata squash with pomegranate seeds
- 4 delicata squash, halved lengthwise and seeded
- 3 teaspoons vegetable oil, divided
- 1/2 cup pumpkin seeds
- 1/2 teaspoon table salt
- 3 tablespoons local honey
- 1/2 cup pomegranate seeds
- 1 1/2 teaspoons coarse sea salt
Preheat oven to 425°. Rub squash with 2 tsp. oil and set on a baking sheet. Roast squash, turning once, until tender when pierced with a fork, about 20 minutes.
Meanwhile, spread pumpkin seeds on a rimmed baking sheet. Drizzle with remaining 1 tsp. oil and the table salt, stirring to coat. Bake until toasted, about 5 minutes.
Put squash on a serving plate. Drizzle with honey, then sprinkle with pomegranate seeds, toasted pumpkin seeds, and sea salt.

4. Butternut squash & apple bisque served with cheesy bread
- 3 cups peeled/diced butternut squash
- 4 cups chicken stock
- 1 apple
- 2 tablespoons chopped shallots
- 1 stalk celery
- 1/2 cup heavy cream
- 1/2 teaspoon grated nutmeg & 1/2 teaspooon cinnamon
- 3 tablespoons veg. oil
Heat oil on medium heat. Cook shallots, celery, and apple until soft. Stir in the nutmeg & cinnamon until fragrant. Add squash and stock, bring to a boil, and simmer for 30 mins or until squash is tender. Pureé in a blender and add cream, salt & pepper.
5. Apple cider mimosas
Our fall brunch menu of choice! Grab some local apple cider from New Morning Market and Prosecco from your local wine store. Dip the rim of your champagne glass in water, and coat with a sugar & cinnamon mixture.
Pour a little bit of apple cider, top with Prosecco, and garnish with an apple slice. Cheers!
6. White chocolate ganache poppy seed cake
If we were bakers, we’d bake this…but instead, we let the New Morning Market experts do it! Just slice, eat and enjoy. Yay, Friendsgiving!
