Thanks to an invite from The Farmer’s Table (a fantastic nonprofit championing our local farmers), we visited Chanticleer Acres (Litchfield) – a regenerative farm nestled among some of the dreamiest country views we’ve ever seen!

Celebrating community, soil health, and the future of farming.

For the past 14 years, The Farmer’s Table has hosted a special annual dinner to celebrate the hardworking farmers in our region. More than just a meal, it’s a gathering of minds, a chance for local farms to connect, share, and learn from one another. Each year, a different farm hosts the event, offering a unique window into their agricultural world. This year, that window opened wide at Chanticleer Acres in Litchfield, CT—and what a view it was!

Soil, science & the future

As part of the event, guests were invited to bring a scoop of their own farm’s soil for a hands-on soil science experience. With guidance from the folks at CT NOFA (Connecticut chapter of the Northeast Organic Farming Association), farmers got an up-close look at the connection between soil health, nutrition, climate resilience, and sustainable agriculture.

We took a wander around and learned that Chanticleer Acres is rooted in history. The farm sits on a former dairy property now owned by filmmaker Harvey Hubbell V, who grew up surrounded by farm life. His mission? Bring the land back to its agricultural roots and grow something meaningful.

Enter Stephen Kassel, the farm manager with a green thumb and a clear vision. What started as a small garden has flourished into a full-fledged, small-scale regenerative farm. Their philosophy: feed the community while healing the land. 🫶

Depending on when you visit (it’s open year-round), the farm stand is brimming with seasonal treasures:

🍯 Raw honey
🍄 Culinary mushrooms
🥬 Gorgeous produce
👕 And the cutest farm merch you’ll ever see (Yes, you must take a selfie with the farm stand—it’s photo-op perfection.)

More than a market

Chanticleer Acres isn’t just about crops—it’s about connection and education. The farm offers tours by appointment and hosts educational events throughout the year. They aim to bring visitors closer to understanding where their food comes from—and how it’s grown. Chanticleer uses regenerative practices, focusing on soil health to create strong, pest-resistant plants, nutritionally dense produce, and build a better ecosystem!
